8 ounce box of Healthy noodles of choice 1 cup julienned carrots
1 cup chopped mushrooms
1⁄4 cup chopped green onions
1 cup chopped red/yellow peppers
For the sauce:
1⁄3 cup hot water
1⁄4 cup soy sauce
2 tablespoons rice vinegar
1 teaspoon minced garlic
1 tablespoon raw honey, maple syrup or sweetener of choice
3⁄4 cup unsweetened creamy/crunchy peanut butter
Instructions:
1. Prepare the noodles according to the package instructions. Drain and serve hot or rinse with cold water based on your preference.
2. To prepare the sauce, add all the sauce ingredients to a high-speed blender and puree until smooth.
3. Combine the chopped vegetables in a pan and stir-fry.
4. Pour the blended sauce into the pan, add the noodles, and mix.
5. Add cooked chicken for more protein, if desired.
